What is your first ever food memory?

Eating my grandmother’s fried meatballs, they were delicious.

What would you make with an avocado?

Definitely avocado and smoked sardinillas (small sardines) salad. Just divine!

What would you make with matcha?

Matcha sushi rice, it goes great with any Asian style protein; like sticky pork or miso aubergine (which is another favourite!).

What would like to be your last ever bite?

Ooh, that’s a tough one, it would have to be lobster, drizzled with olive oil and lemon juice.

What’s your best kitchen hack/trick?

I am a pro at cutting paper thin octopus/tuna/ beef slices for carpaccio.
