It’s a deliciously salty alternative to regular cheeses such as cheddar and mozzarella and isn’t too expensive either (you can buy a block of halloumi for under £2 in most supermarkets). Halloumi is great fried, but you could also try grilling it too. Here are some examples of what you can do with halloumi: 1. Salad Halloumi goes perfectly with tomatoes, just like mozzarella. Fry a few slices of the cheese, thinly slice a tomato or two, and drizzle with balsamic vinegar and olive oil. Add some basil or salad leaves. You could even swap the tomato for watermelon, making a refreshing summer salad. 2. Burger If you are a vegetarian, or simply love halloumi, you will probably be familiar with the Portobello Mushroom and Grilled Halloumi Burger they serve at Nando’s. Well, now you can save a few pounds and make your own at home. Simply place some slices of halloumi in between two burger buns, add a slice of Portobello mushroom, and top with a squeeze of lemon. 3. Kebab Kebabs are perfect for this time of year, especially if you are able to use a barbeque. Try serving cubes of halloumi on skewers with a mixture of vegetables such as courgette, tomatoes, onion and peppers. Grill or barbeque the skewers and serve with a side salad.
