Soffritto: The Not So Secret Secret Recipe

Let’s face it, when it comes to weekday cooking, it’s not always easy. Work can often take over, time disappears, and before we know it, it’s 9pm and we’re faced with an empty fridge and a grumbling stomach.

So when we stumbled across this article from Food52, we felt it was too good not to share. We present you, the not so secret, secret recipe to homemade, tasty meals with no fuss.

Soffritto – and cooking it in batches is the answer. Soffritto is roughly equal parts onion, celery and carrot, fried lightly with oil or butter to prevent the vegetables from sticking. Once softened, allow the mixture to cool, then pop onto a sheet of parchment paper and roll.

Thanks to the fat, the mixture shouldn’t freeze solid, so when you want to add a splash more flavour without all the chopping and cutting, take a slice (yes, it looks a little like chorizo…) and add it to your cooking. Viola!
