Healthy Yellow Thai Salmon Curry With Asapargus

Spice isn’t just for winter, especially when paired with seasonal veg such as asparagus and sweetcorn, adding that extra crunch. This light, healthier alternative to a classic Thai curry is one to try out.

Ingredients

3 tbsp yellow thai paste

2 garlic cloves

4 tsp fish sauce

Salmon fillets

1 can of light coconut milk

Asparagus tips

Sweetcorn

Thai basil

1 cube of chicken stock

300g long grain rice

Instructions

1. Put garlic, fish sauce, Thai paste and spices in one pan and fry for 3-4 minutes.

2. Add in diced salmon fillets.

3. Tip in coconut milk and stir for 10-12 minutes

4. Add in veg.

5. Boil your rice on the side.

6. Serve together.
